The official specification for Polska Wódka/Polish Vodka says vodka production in Poland is a tradition stretching back many centuries. It says the word wódka was first recorded in 1405, that documents show vodka stills in Gdańsk in 1454, and that Kraków records show large-scale production before 1550.
It also describes a long tradition of flavoured vodkas made with herbs, fruit and spices. After the Second World War, it names Goldwasser, Jarzębiak, Pieprzówka and Orzechówka as classic quality vodkas that were being made again.
What makes a Polish vodka good or premium?
The specification does not define “good” or “premium”, and we found no official quality ranking. What it does set are rules that you can check:
- Neutral taste: colourless, clear, with a clean, mild smell and a neutral taste.
- Purer spirit: the spirit is rectified, and finished plain vodka has set maximum residues, for example methanol 10 g and esters 0.5 g per hectolitre of 100% alcohol, with furfural not detectable.
- Water: the spirit is mixed with demineralised water, and the vodka is filtered through media with a pore size of no more than 1 µm.
- No sugar: sugar may not be added to the plain vodka, so its taste comes only from alcohol and water.
It may also be aged or stored for a time in suitable containers. These rules apply to products that use the protected name; the document does not rate any one brand above another.
