How long does qurt last in the fridge?
True dried qurt (kurt, kurut) does not need a fridge and keeps for a long time in a dry place; one source says traditional kurut can be stored for a year. Soft, fresh or homemade half-dried balls are different and should be kept in the fridge. There is no official shelf life, so go by dryness, smell and mold.

How long does qurt last in the fridge?
It depends on which kind you have. Qurt is a dried fermented milk food from Central Asia. Genuinely hard, fully dried qurt is a preserved food. A fermented-milk reference says dried qurt stored in canvas bags keeps for a long time and does not need refrigeration, with no specific figure. A home-cook article says traditional dried Altai kurut can be stored for a year because it is dry.
There is no official shelf life or testing of home batches, so these are traditional claims, not guarantees.
| Type | Where to keep | How long |
|---|---|---|
| Hard, fully dried qurt | Cool, dry place in a breathable bag or jar | A long time; one source says a year |
| Soft or partly dried balls | Fridge in a covered container | A few days to a couple of weeks (rule of thumb); judge by smell |
| Qurt dissolved in water or soup | Fridge | Treat like any dairy dish; use within a few days |
| Store-bought, packaged | Follow the label | Use the date on the pack |
The soft-qurt figure is a cautious rule of thumb, not a tested number.
Do you need to refrigerate dried qurt?
Not if it is truly hard and dry. The fridge can add moisture and make it sweat, so a cool, dry cupboard is the usual choice. If your home is humid, a sealed jar in the fridge may help, but let it reach room temperature before opening.
How to store qurt
- Make sure it is completely dry and hard before storing.
- Put it in a cloth bag, paper bag or loosely closed jar.
- Keep it away from moisture and heat.
- Check it every few weeks.
Signs qurt has gone bad
- Fuzzy or colored mold
- A rotten smell, different from its normal sharp, salty smell
- Soft, sticky or slimy patches
- Insects
If you see mold, discard the piece. Qurt is very salty and hard, so start with a small piece. If you have a dairy allergy, avoid it.

How long does dried qurt last?

How can I tell qurt is spoiled?
Mold, a rotten smell, slimy patches or insects mean throw it out.
